Funfetti Cupcakes

These homemade funfetti cupcakes are bursting with flavor. Fluffy, sweet and loaded with sprinkles.

Funfetti cupcakes:
*3 cups cake flour
*1 tbsp. baking powder
*½ tsp. salt
*1 cup unsalted butter, at room temperature
*2 cups sugar
*5 large eggs, at room temperature
*1 ¼ cups buttermilk, at room temperature
*1 tbsp. vanilla extract
*1 cup sprinkles of choice


  1. Preheat oven to 350 degrees F.
  2. Line muffin tins with cupcake liners.
  3. In a medium bowl, combine cake flour, baking powder and salt. Whisk together and set aside.
  4. In a mixing bowl. Beat butter on medium speed for 2 to 3 minutes, until creamy. Add the sugar in, and beat on medium speed until mixed well. Add the eggs in, beat well. Add in the buttercream and vanilla, until mixed.
  5. On low speed, add in all the dry ingredients, about ½ cup at a time. Do not over beat. When mixed, stir in the sprinkles.
  6. Fill the cupcake tins about 2/3 full. Bake at 17-22 minutes, or until toothpick inserted into the center comes out clean.


Buttercream Frosting:

*3 sticks + 2 tbsp. Unsalted butter, softened

*4-4 ½ cups confectioners’ sugar

*3 tbsp. milk

*1 tbsp. vanilla extract

*Pinch of salt

*Food coloring of choice



In a mixing bowl. Whip butter for about 4 minutes on medium speed or until creamy. Add the rest of the remaining ingredients about ½ cup at a time, mix on low speed for about 2 minutes, then on medium speed for about 4 minutes. Frosting should be creamy and fluffy.  Frost the cupcakes and add sprinkles.
