Mint Chocolate Chip Cupcakes

Ingredients for cupcakes:

(Makes 26-29 cupcakes)

– 2 cups flour

– 1  3/4 cup sugar

– 3/4 cup cocoa

– 2 tsp baking powder

– 1 tsp baking soda

– 1 1/4 tsp salt

– 4 Tbsp vegetable shortening

– 1/2 cup vegetable oil

– 1/2 cup water

– 3 eggs

– 1 cup sour cream

– 2 tsp peppermint extract


Preheat oven to 350F.  In a large bowl, place flour, sugar, cocoa, baking powder, baking soda and salt in it. Stir in vegetable shortening, until mixed well.  Add in eggs, oil, water, peppermint extract and sour cream.  Beat on medium high for 1 to 2 minutes. Fill cupcake tins around 2/3 – 3/4 full. Bake for 19-23 minutes (insert toothpick into the middle of the cupcake to make sure it comes out clean.) Transfer to a wire rack and let cool before frosting.

Peppermint Cream Cheese Frosting:

-1 cup cream cheese

– 1/2 cup butter (softened)

– pinch of salt

-2 tsp. peppermint extract

-2-3 cups powder sugar

-Green food coloring

-1/4 cup chopped chocolate chips (optional)

-Candy canes to decorate


Beat butter until light and fluffy.  Add cream cheese until mixed (don’t over beat.) Add powder sugar (1/2 cup at a time) until mixed well. Add peppermint extract, chocolate chips and 1 drop of food coloring. Beat on low until mixed. Pipe frosting onto cupcakes and add crushed candy canes to top!
