*Makes about 12 ice cream cookie sandwiches
-2 1/4 cups flour
-3/4 teaspoon baking soda
-1 teaspoon salt
-2 stick of butter (softened)
-1 cup sugar
-1/2 cup brown sugar
-2 large eggs
-1 1/2 teaspoons vanilla extract
-1 1/2 cups semi-sweet chocolate
-1/2 cup chopped bittersweet chocolate chunks
-1/2 gallon mint chocolate chip ice cream
In a large bowl, combine flour, baking soda and salt. In another bowl, beat butter, granulated sugar and brown sugar together on medium speed, Until light and fluffy (2-3 minutes.) Add the eggs and vanilla. Beat until mixed.
Add in the dry ingredients (a little at a time.) Beat on low speed until all mixed in (do not over beat.) Stir in the chocolate chips and chocolate chunks. Put the dough in the fridge for 1 hour.
Drop the cookie dough on to a cookie sheet using an ice cream scoop. Press slightly down on the cookies before baking. Bake at 350 degrees F. for 13-16 minutes or until golden brown. Transfer to a cooling rack. Cool completely.
Remove ice cream from the freezer and scoop desired amount of ice cream on to a cookie, top with another. Serve immediately.
