Cookie Dough Recipe:
Servings: 45-50 cookies
-1½ cups unsalted butter (softened)
-2 cups sugar
-2 egg yolks
-4 teaspoons vanilla extract
-2 1/2 teaspoons almond extract
-4 cups all-purpose flour
-1 teaspoon salt
-1 teaspoon baking powder
In a large bowl, beat butter and sugar until fluffy. Add in the eggs and egg yolk, Mix until combined. Add the extracts until mixed well. In another bowl, combine flour, salt and baking powder. Slowly add in the liquid mixture and beat on slow until combined. Refrigerate for 2-4 hours.
Preheat oven to 350 degrees. Roll out dough to about 1/4 inch thick and cut out cookies with a circle cookie cutter. Line the baking pan with parchment paper or use a greased baking sheet. Bake for 7-10 minutes.
Cream Cheese Frosting:
-8-oz package cream cheese (softened)
-3 tablespoons butter (softened)
-1/2 teaspoon vanilla extract
-2 3/4 cups powdered sugar
In a large bowl, mix cream cheese and butter until creamy. Add in vanilla extract and powder sugar, mix until fluffy (about 2-4 minutes.)
Add frosting to cookie and top with fruit. Enjoy!!
