How fun are these J. Crew inspired cookies by Inspired to Taste?! Such a fun and unique twist on cookies. Did I mention that they are also Vegan cookies?! They look absolutely delicious!
Recipe for cookies:

3 cups almond flour
1/2 cup arrowroot flour
1 1/2 teaspoons cinnamon
1/2 teaspoon cardamom
1/2 teaspoon baking soda
pinch of sea salt
1/2 cup organic maple syrup
2 tablespoons vanilla bean paste
2 tablespoons butter infused coconut oil, melted
1/4 teaspoon (or about 30 drops) vanilla creme-flavored liquid Stevia
Preheat oven to 350º and line a cookie sheet with parchment paper.
Combine all the dry ingredients in a large bowl, and mix well.
Add the wet ingredients, and mix as thoroughly as possible. (The mixture will be crumbly.)
Using your hands, press the crumbly dough together until it’s well-combined and can form a large ball.
Cover dough and place in freezer for about 15 minutes (chilled dough is easier to roll out and cut).
I like to work with about 1/4 of the dough at a time, leaving the remainder in the freezer to continue chilling.
Roll out the dough between two sheets of parchment paper. The thicker the dough, the softer the cookie. I generally aim for about 1/4 inch (or about 1/2 centimeter.)
Use a cookie cutter (or template and knife) to cut out your shapes.
Rinse and wipe the cookie cutter and/or knife frequently to ensure clean-cut edges.
Place cut-outs on parchment-lined cookie sheet and bake for 10-12 minutes (edges/corners will turn slightly brown).
Carefully remove cookies from tray with a spatula, and allow them to cool on a cooling rack before decorating.
I frosted my J.Crew cookies with low-sugar royal icing, made with a mix of organic powdered sugar and powdered Swerve Sweetener. I used TruColor organic powdered food colorings, which can be purchased at theultimatebaker.com
