Meringue Cookie Recipe:
-1/2 cup egg whites or 4 large egg whites
-1/2 tsp cream of tartar
-1/2 cup and 1 tbsp granulated white sugar
-1 cup lightly spooned powdered sugar
Preheat oven to 200 F. Place parchment paper on a cookie baking sheet.
Whisk egg whites in a bowl until frothy. Add the cream of tartar and beat until soft peaks form.
Add the granulated sugar (a little at a time) and whisk until the meringue reaches a stiff peak. Fold in the powdered sugar.
Place the meringue in a piping bag with the tip of choice and pipe on to the baking sheet. Bake for 2 hours.
Makes about 12-13 meringues.
To make Meringue Pops:
Pipe a line of royal icing on the back of the meringue. Stick the lollipop stick on, Let dry.
