Ingredients for the Sugar Cookies:
-3/4 cup butter
-3/4 cup granulated sugar
-1 large egg
-2 teaspoons vanilla extract
-1 teaspoon peppermint extract
-2 1/4 cups flour
-1/2 teaspoon baking powder
In a large bowl, beat butter until smooth. Add sugar and beat on high until fluffy. Add egg, vanilla and peppermint extracts and beat on high for 1-2 minutes. Add flour (mixing in approx. 1/2 cup at a time) and baking powder. Beat on slow until all mixed together.
Roll out the dough, then put into the refrigerator for an hour (can stay in the refrigerator for 1 day if needed).
Once it has been chilled, roll out to desired thickness (1/4 of an inch thick is optimal). Cut into desired shapes with a cookie cutter. Bake at 350 degrees F for 7-10 minutes.
Royal Icing Recipe:
-5 tablespoons of meringue powder
-3/4 cup warm water
-1 teaspoon cream of tartar
-1/2 teaspoon vanilla extract
-1/2 teaspoon peppermint extract
-2.25lbs. powder sugar
Stir meringue powder and water in a mixing bowl. Stir in cream of tartar and extracts. Add in powder sugar (2 cups at a time), beat on your lowest speed for 8-10 minutes. Store in a tight sealed container, best used within. Enjoy!
